Traditional Marble Cake

This traditional marble cake is an easy to make and quick dessert for every occasion. It’s smooth, fluffy and tastes great with a freshly roasted coffee. Marble cake is an Ideal dessert to prepare if you expect guests in a few hours.

What ingredients will I need?

Marble cake
  • 350 - 400 g rice flour (or 300 g wheat flour)
  • 200 g cane sugar
  • 1 vanilla sugar (20 g ~ 1,5 tablespoon
  • 2 tablespoons cocoa
  • 1 baking powder (12 g ~ 1 tablespoon)
  • 2 large eggs
  • 200 ml milk (soya milk works as well)
  • 150 ml vegetable oil
  • 0,5 teaspoon vanilla extract
  • grated lemon peel (one medium lemon)

How can I make this dessert?

  1. Pre-heat an oven for 160°C.
  2. In one bowl, mix flour and baking powder. 
  3. In another and large bowl, beat the eggs for a while.
  4. Slowly add cane and vanilla sugar and beat until light and creamy.
  5. Pour half of the vegetable oil and milk in the sugar-egg mixture. Stir.
  6. Add half of the flour mixture and stir. Whisk for a while.
  7. Add the rest of the vegetable oil, milk and flour. Stir and whisk for a while.
  8. Add the grated lemon peel, vanilla extract and stir.
  9. Divide the mixture in two bowls. 
  10. Stir cocoa in one of the bowls. 
  11. Pour the white mixture in a greased marble cake pan. 
  12. Pour the chocolate batter over top (I don't cover the white batter completely, I leave the edges white).
  13. Bake the marble cake for about 45 minutes or longer until a skewer inserted into the centre comes out clean.
  14. Let the marble cake cool. You can decorate it with a chocolate icing.
