Chocolate Cupcakes with Mascarpone Cream

This fluffy chocolate cupcake is the must-have dessert for every chocolate lover. Pieces of dark chocolate, cocoa and creamy mascarpone on the top create together delicious taste.

Chocolate Cupcakes with Mascarpone Cream

What ingredients will I need?

Cupcakes
  • 150g rice flour
  • 40g cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Pinch of salt
  • 130g cane sugar
  • 1 large egg
  • 50g melted unsalted butter
  • 120ml heavy cream
  • 50g dark chocolate (at least 60% cocoa)

Vanilla mascarpone cream
  • 250g mascarpone
  • 100ml heavy cream
  • 1/2 teaspoon vanilla extract
  • 1,5 spoon powdered sugar 

How can I make this dessert?

Let’s prepare the cupcakes
  • Let chocolate and butter melt in the water bath.
  • In one bowl, mix all of the powdery ingredients.
  • In another bowl, whisk an egg and add cane sugar. Whisk together for a while.
  • Pour heavy cream into the egg-sugar mixture and stir (don’t whisk). 
  • Add chocolate-butter mixture into the egg-sugar mixture (make sure it’s not hot).
  • Slowly start pouring the powdery mixture into the chocolate mixture. Stir. 
  • The chocolate dough is solid (it’s absolutely ok).
  • Preheat an oven to 180°C. 
  • Using two teaspoons, put the dough into 12 small muffin baking cups (and use the muffin baking tray) or into 6 large freestanding baking cups. 
  • Bake the muffins for 15 minutes (small baking cups) or 25 minutes (large freestanding baking cups).
  • When muffins are baked, let them cool.

Now it’s time for the topping
  • In one bowl, stir mascarpone with sugar and vanilla extract.
  • Add heavy cream and whisk together until stiff (don't over-whipped the cream!).
  • Let the cream cool in the fridge.
  • Fill a piping bag with cream and decorate the muffins. Garnish with chocolate shavings.
